BABY CORN PANEER KHURMA
INGREDIENTS
Baby corn- 200gms
Paneer- 200gms
Curd- 1/2 cup
Kashmiri red chili powder- 2-3 tbsp
Turmeric powder- 1tbsp
Ginger garlic paste- 2tbsp
Paste of 2-3 medium size tomato
Paste of 2 medium size onion
Salt as per taste
Oil for cooking
Ingredients for Khurma masala
Coconut powder- 3tbsp
Khash Khash (Poppy Seeds)- 2tbsp
Cashew nut- 10-12
Green chilies- 3-4
Fistful of cilantro
Fistful of fresh mint
add little water and make a fine paste and keep aside
METHOD
1) Baby Corn marination:
Clean baby corn and cut to desired size, now add 1/2tsp ginger garlic paste, 1/4tsp turmeric powder, 1/2tsp kashmiri red chili powder, 1/2tsp salt.
Add little water with all the above ingredients and mix well, keep aside and marinate for at least 1/2 an hour.
2) Paneer marination:
Cut paneer to desired size, now add 1/2tsp ginger garlic paste, 1/4tsp turmeric powder, 1/2tsp kashmiri red chili powder, 1/2tsp salt.
Add little water with all the above ingredients and mix well, keep aside and marinate for at least 1/2 an hour.
Now heat 2tbsp oil in a frying pan on medium flame and saute the marinated paneer cubes for 2-3 minutes, remove and keep aside.
In the same pan add 2tbsp oil and saute the marinated baby corn for 2 minutes on medium flame, remove and keep aside.
3) PREPARING GRAVY
Heat 3-4tbsp oil in a kadai on medium flame and add paste mix in oil and cook for few seconds and add 1tbsp ginger garlic paste mix it with onion and cook it for 2 minutes, now add all other dry ingredients mix properly with onion and little by little water and and cook till the rawness of the masala is gone. Now add the prepared khurma masala mix it and add little water mix and add 4tbsp tomato paste mix and and cook for 1 minute, now add curd mix cover and cook for another minute till the rawness of curd is gone and water is reduced. Now add Sauted baby corn mix cover and cook for a minute and add water for baby corn to softened, now add chopped cilantro and fresh mint and sauted paneer mix it with gravy and cook for a minute and add water checking the consistancy of khurma, add water for desired thickness of the gravy, cover and cook till the khurma is thich enough as you desire. Now lower the flame and let the khurma cook on low flame for 1-2 minutes. Your Baby Corn Paneer khurma is ready.
Serve it hot with roti, parata, plain naan, or butter naan.
